Healthy and Simple No-Bake Oatmeal Raspberry Cookie Recipe

What Makes This No-Bake Cookie Healthy?

Raspberries

Raspberries are a good source of fiber, vitamin C, and polyphenol antioxidants. Polyphenol antioxidants have been shown to promote brain function, focus, and attention and reduce the risk of chronic diseases like heart disease, Alzheimer’s, and Dementia. High antioxidant consumption has been linked to reduced anxiety and depression as well as improved general mood. Polyphenols may also provide protection against cancer, and in animal studies, raspberries reduced esophageal tumor incidence by 54% and decreased the number of tumors by 62%.

Oats

Oats are not only whole grain foods and a great source of sustained energy but also a prebiotic. Prebiotics feed the good bacteria in our GI tract and promote a healthy gut. Oats are a good source of B vitamins, fiber, selenium, and zinc. B vitamins are important for mood regulation and needed to prevent fatigue. Zinc provides immune support; fiber helps you feel full and satisfied, and Selenium is not only an essential mineral but also an antioxidant too.

Healthy No-Bake Oatmeal Raspberry Cookie Recipe

Yield: 24 Cookies

Prep Time: 10 minutes

Refrigerate Time: 2 hours

Total Time: 2 hours, 10 minutes

Servings: 24

Materials: 

  • Parchment Paper

Ingredients:

  • ½ cup fresh raspberries

  • 2 ½ cups old fashioned oats

  • ¼ teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 Tablespoons unsalted butter, softened at room temperature 

  • 1/3 cup honey (or for less sugar, 1/3 cup sugar-free syrup)

  • ½ cup almond butter (or any nut butter)

Instructions:

  1. Thoroughly wash the raspberries in a colander and pat them dry. 

  2. Mash the raspberries with the back of a spoon until the raspberries are a puree consistency.

  3. Combine all ingredients in a medium bowl.

  4. Mix well with a spoon or your hands.

  5. Place parchment paper on a flat tray.

  6. Use your hands to form 2 ½ inch round cookies. Place the cookies on the parchment paper.

  7. Refrigerate the cookies for 2 hours.
