Imagine our surprise when we learned that July is national ice cream month. In our household, every month is ice cream appreciation month. Turns out, most Americans agree—the average U.S. citizen consumes roughly 48 pints per year, more than any other country.

Let's lean into it and try out a healthy, yummy chocolate/banana/peanut butter ice cream recipe to celebrate - no fancy equipment required! If you or someone you're caring for needs extra calories or vitamins, you can easily add some protein powder or nutritional supplements without affecting the taste at all.

Ingredients

  • 1/2 cup cocoa powder
  • 3 tbsp peanut butter
  • 2 crumbled dark chocolate bars
  • 2 frozen bananas (already ripened, peeled, and sliced)
  • A pinch of salt
  • Granola for texture (optional)
  • Brownie bites (optional)

Instructions

  • Combine all ingredients (except the brownie bites or granola if you choose to add them) in a food processor if you have one, or a high-speed blender if you don't.
  • Blend until smooth, adding a bit of almond milk if the texture is too thick to fully blend.
  • Add brownie bites and/or granola and lightly blend to mix.
  • Freeze for an hour and serve in a dish or cone - enjoy!
